Modern Anchovy Sauce
A versatile anchovy sauce that can be used to enhance brown butter, drawn butter, or hollandaise sauce. This recipe provides a simple method to create a flavorful anchovy essence.
Ingredients
- 6 fillets Anchovy fillets, oil-packed (High quality anchovies are recommended)
- 2 tablespoons Olive oil (Extra virgin olive oil)
- 1 clove Garlic (Minced)
- 1 teaspoon Lemon juice (Freshly squeezed)
- 1 pinch Black pepper (Freshly ground)
Instructions
- 1Drain the anchovy fillets from their oil. Mince the garlic clove.
- 2Heat olive oil in a small saucepan over low heat. Add the minced garlic and cook until fragrant, about 1 minute. Add the anchovy fillets and cook, stirring frequently, until they dissolve into the oil, about 5-7 minutes.
- 3Remove the saucepan from the heat. Stir in the lemon juice and black pepper. Taste and adjust seasoning as needed.
