Mock Bisque Soup
A simple and flavorful soup that mimics the richness of a bisque without using seafood. This recipe uses tomatoes, onions, and a touch of sweetness to create a comforting and satisfying dish.
Ingredients
- 1 14.5 oz can Canned crushed tomatoes (Original recipe calls for 1/2 can, adjusting for modern portions)
- 2 teaspoons Granulated sugar
- 0.25 teaspoon Baking soda
- 0.5 medium Yellow onion (Stuck with cloves)
- 6 whole Whole cloves (To be stuck in the onion)
- 1 sprig Fresh parsley
- 1 leaf Bay leaf (Small piece)
- 4 cups Vegetable broth (Added for flavor and volume)
- 2 tablespoons Butter (Added for richness)
- 0.5 cup Heavy cream (Optional, for extra richness)
- 0.5 teaspoon Salt (To taste)
- 0.25 teaspoon Black pepper (To taste)
Instructions
- 1Peel the onion and stick it with 6 whole cloves. This will infuse the soup with flavor.
- 2In a medium saucepan, combine the crushed tomatoes, sugar, baking soda, cloved onion, parsley sprig, bay leaf, and vegetable broth. Bring to a simmer over medium heat.
- 3Reduce heat to low, cover, and simmer for 15 minutes, stirring occasionally. Remove the onion, parsley sprig, and bay leaf before proceeding.
- 4Stir in the butter, salt, and pepper. If desired, stir in the heavy cream for a richer flavor. Heat through gently, but do not boil.
