Marshmallow Pudding à la Stanley
A classic marshmallow pudding with candied cherries and walnuts, perfect for a light and sweet dessert.
Ingredients
- 8 ounces Marshmallows (About 1/2 pound, use regular or mini marshmallows)
- 1 cup Heavy cream
- 0.5 teaspoon Vanilla extract
- 0.25 cup Candied cherries
- 0.5 cup English walnut meats
- 2 tablespoons Powdered sugar
- 0.25 cup Rum (For soaking cherries)
Instructions
- 1Place the candied cherries in a small bowl and cover with rum. Let them soak for at least 1 hour, or up to overnight. After soaking, drain the cherries and cut them into small pieces.
- 2Cut the walnut meats and marshmallows into small pieces.
- 3In a large bowl, whip the heavy cream until stiff peaks form. Gradually add the powdered sugar and vanilla extract while whipping.
- 4Gently fold in the chopped marshmallows, walnuts, and rum-soaked cherries into the whipped cream. Transfer the mixture to a mold or individual serving dishes. Chill in the refrigerator for at least 1 hour before serving.
