Light and Airy Popovers

A simple recipe for light and airy popovers, based on the original instructions and incorporating sugar for a touch of sweetness.

Ingredients

  • 3 Eggs (Large)
  • 1 tablespoon Sugar (Granulated)
  • 1 cup Milk (Whole milk recommended)
  • 1 cup All-purpose flour
  • 0.5 teaspoon Salt
  • 1 tablespoon Butter (Melted, for greasing)

Instructions

  1. 1Preheat oven to 450°F (232°C). Generously grease a 6-cup muffin tin with melted butter.
  2. 2In a large bowl, whisk the eggs and sugar together until very light and frothy, about 2-3 minutes.
  3. 3Gradually whisk in the milk until combined. Add the flour and salt and whisk until just combined. Do not overmix; a few lumps are okay.
  4. 4Pour the batter into the prepared muffin tin, filling each cup about 2/3 full.
  5. 5Bake for 15 minutes at 450°F (232°C), then reduce the oven temperature to 350°F (177°C) and bake for another 15 minutes, or until the popovers are golden brown and puffed up. Do not open the oven door during baking.
  6. 6Remove from oven and serve immediately. Popovers are best enjoyed warm.
