Light and Airy Popovers
A simple recipe for light and airy popovers, based on the original instructions and incorporating sugar for a touch of sweetness.
Ingredients
- 3 Eggs (Large)
- 1 tablespoon Sugar (Granulated)
- 1 cup Milk (Whole milk recommended)
- 1 cup All-purpose flour
- 0.5 teaspoon Salt
- 1 tablespoon Butter (Melted, for greasing)
Instructions
- 1Preheat oven to 450°F (232°C). Generously grease a 6-cup muffin tin with melted butter.
- 2In a large bowl, whisk the eggs and sugar together until very light and frothy, about 2-3 minutes.
- 3Gradually whisk in the milk until combined. Add the flour and salt and whisk until just combined. Do not overmix; a few lumps are okay.
- 4Pour the batter into the prepared muffin tin, filling each cup about 2/3 full.
- 5Bake for 15 minutes at 450°F (232°C), then reduce the oven temperature to 350°F (177°C) and bake for another 15 minutes, or until the popovers are golden brown and puffed up. Do not open the oven door during baking.
- 6Remove from oven and serve immediately. Popovers are best enjoyed warm.
