Lemon Sauce

Lemon Sauce

A simple lemon sauce, perfect for serving with desserts like Apple Pudding.

Ingredients

  • 0.33 cup Boiling water
  • 3 tablespoons Lemon juice
  • 0.5 teaspoon Lemon rind (From about 1/2 lemon)
  • 4 tablespoons Butter
  • 0.25 cup Sugar
  • 2 Egg yolks

Instructions

  1. 1Grate the lemon rind. Separate the egg yolks from the whites. Lightly beat the egg yolks.
  2. 2In a heatproof bowl, cream the butter until light and fluffy. Gradually add the sugar, continuing to cream until the mixture is smooth.
  3. 3Add the lightly beaten egg yolks to the butter and sugar mixture. Mix well. Then, gradually add the boiling water, mixing constantly.
  4. 4Place the bowl over a saucepan of simmering water (double boiler). Cook, stirring constantly, until the mixture thickens. This should take about 5-8 minutes.
  5. 5Remove the bowl from the heat. Stir in the lemon juice and lemon rind.
