Hot Water Sponge Cake

A light and airy sponge cake made with hot water for a tender crumb.

Ingredients

  • 2 Egg yolks
  • 1 cup Granulated sugar
  • 0.375 cup Hot water
  • 0.25 teaspoon Vanilla extract (Using vanilla extract instead of lemon extract)
  • 2 Egg whites
  • 1 cup All-purpose flour
  • 1.5 teaspoons Baking powder
  • 0.25 teaspoon Salt

Instructions

  1. 1Preheat oven to 350°F (175°C). Grease and flour a shallow 9-inch cake pan.
  2. 2In a large bowl, beat the egg yolks until thick and lemon-colored, about 3-5 minutes. Gradually add half of the sugar while continuing to beat.
  3. 3Add the hot water, remaining sugar, and vanilla extract to the egg yolk mixture. Mix well. In a separate bowl, beat the egg whites until stiff peaks form. Gently fold the egg whites into the yolk mixture. In another bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  4. 4Pour the batter into the prepared cake pan and bake for 25 minutes, or until a toothpick inserted into the center comes out clean.
  5. 5Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely. Serve and enjoy!
