Hot Mayonnaise
A simple, warm mayonnaise sauce perfect for vegetables or fish.
Ingredients
- 2 Egg yolks
- 2 tablespoons Olive oil
- 1 tablespoon White vinegar
- 0.25 cup Hot water
- 0.25 teaspoon Salt
- 0.0625 teaspoon Cayenne pepper (A few grains)
- 1 teaspoon Fresh parsley, finely chopped
Instructions
- 1In a heatproof bowl, whisk the egg yolks. Gradually drizzle in the olive oil, whisking constantly until the mixture emulsifies and thickens. Add the oil very slowly, a few drops at a time at first, then in a thin stream.
- 2Slowly pour in the vinegar and hot water, whisking continuously to combine. The mixture will thin out.
- 3Place the bowl over a saucepan of simmering water (double boiler). Ensure the bottom of the bowl doesn't touch the water. Cook, whisking constantly, until the mixture thickens to a sauce-like consistency, about 3-5 minutes.
- 4Remove from heat and stir in the salt, cayenne pepper, and chopped parsley. Serve immediately.
