Hot Chocolate

A classic hot chocolate recipe made with scalded milk and melted chocolate, finished with whipped cream.

Ingredients

  • 1 cup Boiling Water
  • 3 cups Milk
  • 2 ounces Semi-sweet Chocolate (Original recipe calls for vanilla or Baker's chocolate)
  • 2 tablespoons Sugar (Adjust to taste depending on chocolate sweetness)
  • 1 pinch Salt
  • to garnish Whipped Cream

Instructions

  1. 1In a saucepan, heat the milk over medium heat until it begins to steam and small bubbles form around the edges. Do not boil.
  2. 2Place a heatproof bowl over a saucepan of simmering water (double boiler). Ensure the bottom of the bowl doesn't touch the water. Add the chocolate to the bowl and melt, stirring occasionally, until smooth.
  3. 3Remove the melted chocolate from the heat. Add the sugar, salt, and gradually add the boiling water, stirring until smooth. Place the mixture on the stovetop over medium heat and bring to a gentle boil for one minute, stirring constantly.
  4. 4Add the chocolate mixture to the scalded milk and stir well to combine. Serve immediately in mugs or chocolate cups, topped with whipped cream.
