Homemade Allspice Extract
A homemade allspice extract using brandy, lemon, and almond flavors. Great for baking and flavoring.
Ingredients
- 2 whole, or 1 tsp ground Nutmeg (Freshly grated is best, but ground nutmeg can be substituted.)
- 2 tablespoons Lemon extract
- 1 teaspoon Almond extract
- 1.5 cups Brandy (A good quality brandy will improve the flavor.)
- 3 cups Beef broth (Use a good quality beef broth, preferably homemade. Low sodium is recommended.)
- 1 strip Lemon rind (Use a vegetable peeler to get thin strips of rind, avoiding the white pith.)
- 1 strip Orange rind (Use a vegetable peeler to get thin strips of rind, avoiding the white pith.)
Instructions
- 1In a medium saucepan, combine the nutmeg, lemon extract, almond extract, and beef broth.
- 2Bring the mixture to a simmer over medium heat. Reduce heat to low and simmer gently for 1 hour and 30 minutes, uncovered.
- 3Remove from heat. Stir in the brandy, lemon rind, and orange rind.
- 4Let the mixture cool completely. Strain through a fine-mesh sieve or cheesecloth into a clean bottle or jar. Store in a cool, dark place.
