Halibut Soup
A simple and flavorful halibut soup.
Ingredients
- 1.5 pounds Halibut fillets (Cut into 1-inch cubes)
- 1 medium Onion (Chopped)
- 1 medium Carrot (Chopped)
- 1 Celery stalk (Chopped)
- 2 medium Potato (Peeled and diced)
- 6 cups Fish stock
- 1 Bay leaf
- 2 tablespoons Fresh parsley (Chopped, for garnish)
- 0.5 teaspoon Salt (Or to taste)
- 0.25 teaspoon Black pepper (Or to taste)
Instructions
- 1Chop the onion, carrot, and celery. Peel and dice the potatoes. Cut the halibut into 1-inch cubes.
- 2In a large pot or Dutch oven, sauté the onion, carrot, and celery over medium heat until softened, about 5 minutes.
- 3Add the diced potatoes and fish stock to the pot. Bring to a boil, then reduce heat and simmer for 15 minutes, or until the potatoes are tender.
- 4Add the halibut cubes, bay leaf, salt, and pepper to the soup. Simmer for another 5-7 minutes, or until the halibut is cooked through and flakes easily with a fork.
- 5Remove the bay leaf before serving. Garnish with fresh parsley. Serve hot.
