Fruit Pinwheel Biscuits

Ingredients

  • 2.5 cups All-purpose flour
  • 4 teaspoons Baking powder
  • 0.5 teaspoon Salt
  • 2 tablespoons Granulated sugar
  • 4 tablespoons Cold unsalted butter, cut into small cubes
  • 0.75 cup Milk
  • 0.33 cup Stoned raisins, finely chopped
  • 2 tablespoons Candied citron, finely chopped
  • 0.33 teaspoon Ground cinnamon
  • 2 tablespoons Melted butter, for brushing
  • 1 tablespoon Granulated sugar, for sprinkling

Instructions

  1. 1Preheat oven to 450°F (232°C).
  2. 2In a large bowl, whisk together flour, baking powder, salt, and 2 tablespoons of sugar.
  3. 3Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  4. 4Gradually add milk, mixing until just combined. Do not overmix.
  5. 5Turn dough out onto a lightly floured surface and roll into a rectangle about 1/4 inch thick.
  6. 6Brush the dough with melted butter. Sprinkle with raisins, citron, cinnamon, and 1 tablespoon of sugar.
  7. 7Roll the dough tightly like a jelly roll. Cut into 3/4-inch thick slices.
  8. 8Place the slices on a buttered baking sheet and bake in the preheated oven for 12-15 minutes, or until golden brown.
  9. 9Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
