Fried Summer Squash

Simple and delicious fried summer squash, perfect as a side dish or snack.

Ingredients

  • 2 medium Summer Squash (Yellow or zucchini squash)
  • 0.5 tsp Salt (To taste)
  • 0.25 tsp Black Pepper (Freshly ground, to taste)
  • 0.5 cup All-Purpose Flour
  • 0.5 cup Bread Crumbs (Plain or seasoned)
  • 1 Egg (Large)
  • 0.5 cup Vegetable Oil (For frying)

Instructions

  1. 1Wash the summer squash and cut into one-half inch thick slices.
  2. 2Sprinkle the squash slices with salt and pepper.
  3. 3Place flour in a shallow dish. In a second shallow dish, beat the egg. In a third shallow dish, place the bread crumbs.
  4. 4Dip each squash slice in the flour, then the egg, and then the bread crumbs, ensuring it is fully coated.
  5. 5Heat the vegetable oil in a large skillet over medium-high heat. Once the oil is hot, carefully place the breaded squash slices in the skillet, ensuring not to overcrowd. Fry for 2-3 minutes per side, or until golden brown. Remove the fried squash from the skillet and place on a paper towel-lined plate to drain excess oil.
