Fried Summer Squash
Simple and delicious fried summer squash, perfect as a side dish or snack.
Ingredients
- 2 medium Summer Squash (Yellow or zucchini squash)
- 0.5 tsp Salt (To taste)
- 0.25 tsp Black Pepper (Freshly ground, to taste)
- 0.5 cup All-Purpose Flour
- 0.5 cup Bread Crumbs (Plain or seasoned)
- 1 Egg (Large)
- 0.5 cup Vegetable Oil (For frying)
Instructions
- 1Wash the summer squash and cut into one-half inch thick slices.
- 2Sprinkle the squash slices with salt and pepper.
- 3Place flour in a shallow dish. In a second shallow dish, beat the egg. In a third shallow dish, place the bread crumbs.
- 4Dip each squash slice in the flour, then the egg, and then the bread crumbs, ensuring it is fully coated.
- 5Heat the vegetable oil in a large skillet over medium-high heat. Once the oil is hot, carefully place the breaded squash slices in the skillet, ensuring not to overcrowd. Fry for 2-3 minutes per side, or until golden brown. Remove the fried squash from the skillet and place on a paper towel-lined plate to drain excess oil.
