Ingredients

  • 1 cup All-purpose flour
  • 1.25 teaspoons Baking powder
  • 0.25 teaspoon Salt
  • 4 Eggs (Separated)
  • 1 teaspoon Lemon extract
  • 0.75 cup Granulated sugar
  • 0.25 cup Water
  • 0.25 cup Cornstarch

Instructions

  1. 1In a mixing bowl, beat the egg yolks until they are thick and lemon-colored. This should take about 3-5 minutes.
  2. 2Gradually add the sugar to the egg yolks, beating for two minutes. Then, add the water and mix well.
  3. 3In a separate bowl, mix the cornstarch and flour. Sift this mixture together with the baking powder and salt.
  4. 4Gradually add the dry ingredients to the wet ingredients (egg yolk mixture), mixing until thoroughly combined.
  5. 5In a clean bowl, beat the egg whites until stiff peaks form.
  6. 6Gently fold the beaten egg whites into the batter. Add the lemon extract and mix until just combined.
  7. 7Pour the batter into a greased and floured cake pan. Bake in a moderate oven (350°F / 175°C) for 30 minutes, or until a toothpick inserted into the center comes out clean.
