Curried Eggs
A simple and flavorful curried egg dish, perfect as a light lunch or side.
Ingredients
- 3 Eggs (Hard-boiled)
- 2 tablespoons Butter
- 2 tablespoons All-purpose flour
- 0.25 teaspoon Salt
- 0.5 teaspoon Curry powder
- 0.125 teaspoon Black pepper
- 1 cup Milk (Hot)
Instructions
- 1Place eggs in a saucepan and cover with cold water. Bring to a boil over medium-high heat. Once boiling, remove from heat, cover, and let sit for 10 minutes. Drain and rinse with cold water. Peel the eggs.
- 2In a saucepan, melt the butter over medium heat. Add the flour and cook, stirring constantly, for 1 minute to create a roux.
- 3Add the salt, curry powder, and pepper to the roux. Gradually whisk in the hot milk, stirring constantly to prevent lumps. Cook until the sauce has thickened slightly, about 3-5 minutes.
- 4Cut the hard-boiled eggs into eighths lengthwise. Gently add the eggs to the sauce and reheat for 2-3 minutes, being careful not to overcook the eggs.
- 5Serve hot.
