Curried Eggs

A simple and flavorful curried egg dish, perfect as a light lunch or side.

Ingredients

  • 3 Eggs (Hard-boiled)
  • 2 tablespoons Butter
  • 2 tablespoons All-purpose flour
  • 0.25 teaspoon Salt
  • 0.5 teaspoon Curry powder
  • 0.125 teaspoon Black pepper
  • 1 cup Milk (Hot)

Instructions

  1. 1Place eggs in a saucepan and cover with cold water. Bring to a boil over medium-high heat. Once boiling, remove from heat, cover, and let sit for 10 minutes. Drain and rinse with cold water. Peel the eggs.
  2. 2In a saucepan, melt the butter over medium heat. Add the flour and cook, stirring constantly, for 1 minute to create a roux.
  3. 3Add the salt, curry powder, and pepper to the roux. Gradually whisk in the hot milk, stirring constantly to prevent lumps. Cook until the sauce has thickened slightly, about 3-5 minutes.
  4. 4Cut the hard-boiled eggs into eighths lengthwise. Gently add the eggs to the sauce and reheat for 2-3 minutes, being careful not to overcook the eggs.
  5. 5Serve hot.
