Crullers
Classic crullers, a type of fried pastry, made with a rich dough and dusted with powdered sugar and cinnamon.
Ingredients
- 0.25 cup Butter, softened
- 1 cup Granulated sugar
- 2 Egg yolks
- 2 Egg whites
- 4 cups All-purpose flour
- 0.25 teaspoon Grated nutmeg
- 3.5 teaspoons Baking powder
- 1 cup Milk
- 0.5 cup Powdered sugar (For dusting)
- 0.5 teaspoon Ground cinnamon (For dusting)
- 4 cups Vegetable oil (For frying)
Instructions
- 1In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- 2Beat the egg yolks well and add them to the creamed mixture. Beat the egg whites until stiff peaks form and gently fold them into the mixture.
- 3In a separate bowl, mix together the flour, grated nutmeg, and baking powder.
- 4Add the dry ingredients to the wet ingredients alternately with the milk, beginning and ending with the dry ingredients. Mix until just combined.
- 5Lightly flour a board or countertop. Toss the dough onto the floured surface and roll it out to about 1/4 inch thickness. Cut the dough into pieces approximately 3 inches long by 2 inches wide. Make four one-inch parallel gashes crosswise at equal intervals.
- 6Take up each piece by running a finger in and out of the gashes to create a twisted shape.
- 7Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Carefully lower the crullers into the hot oil, a few at a time, and fry for 2-3 minutes per side, or until golden brown. Remove the crullers with a slotted spoon and place them on a wire rack to drain.
- 8While the crullers are still warm, dust them generously with powdered sugar and cinnamon.
