Crullers

Classic crullers, a type of fried pastry, made with a rich dough and dusted with powdered sugar and cinnamon.

Ingredients

  • 0.25 cup Butter, softened
  • 1 cup Granulated sugar
  • 2 Egg yolks
  • 2 Egg whites
  • 4 cups All-purpose flour
  • 0.25 teaspoon Grated nutmeg
  • 3.5 teaspoons Baking powder
  • 1 cup Milk
  • 0.5 cup Powdered sugar (For dusting)
  • 0.5 teaspoon Ground cinnamon (For dusting)
  • 4 cups Vegetable oil (For frying)

Instructions

  1. 1In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  2. 2Beat the egg yolks well and add them to the creamed mixture. Beat the egg whites until stiff peaks form and gently fold them into the mixture.
  3. 3In a separate bowl, mix together the flour, grated nutmeg, and baking powder.
  4. 4Add the dry ingredients to the wet ingredients alternately with the milk, beginning and ending with the dry ingredients. Mix until just combined.
  5. 5Lightly flour a board or countertop. Toss the dough onto the floured surface and roll it out to about 1/4 inch thickness. Cut the dough into pieces approximately 3 inches long by 2 inches wide. Make four one-inch parallel gashes crosswise at equal intervals.
  6. 6Take up each piece by running a finger in and out of the gashes to create a twisted shape.
  7. 7Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Carefully lower the crullers into the hot oil, a few at a time, and fry for 2-3 minutes per side, or until golden brown. Remove the crullers with a slotted spoon and place them on a wire rack to drain.
  8. 8While the crullers are still warm, dust them generously with powdered sugar and cinnamon.
