Creamy Tomato Soup with Cracker Crumbs

A simple and comforting tomato soup, enriched with butter and thickened with cracker crumbs. Inspired by classic fish chowder techniques.

Ingredients

  • 2.5 cups Stewed Tomatoes (Canned or homemade, strained for a smoother texture)
  • 3 tablespoons Butter
  • 0.6666666666666666 cup Cracker Crumbs (Saltines or Ritz crackers work well)
  • 0.5 teaspoon Salt (Or to taste)
  • 0.25 teaspoon Black Pepper (Or to taste)
  • 2 cups Vegetable Broth (Or water)

Instructions

  1. 1In a medium saucepan, melt the butter over medium heat.
  2. 2Add the stewed and strained tomatoes and vegetable broth to the saucepan. Bring to a simmer.
  3. 3Reduce heat to low and simmer for 15 minutes, stirring occasionally.
  4. 4Stir in the cracker crumbs just before serving. Season with salt and pepper to taste.
