Cranberry Jelly
A simple and classic cranberry jelly recipe, perfect for holidays or as a condiment.
Ingredients
- 4 cups Fresh Cranberries (Pick over and wash thoroughly.)
- 1 cup Water (Boiling)
- 2 cups Granulated Sugar
Instructions
- 1Pick over the cranberries to remove any stems or damaged berries. Wash the cranberries thoroughly under cold running water.
- 2Place the washed cranberries in a medium saucepan with 1 cup of boiling water. Bring the mixture back to a boil, then reduce heat and simmer for 20 minutes, or until the cranberries have burst and are soft.
- 3Rub the cooked cranberries through a fine-mesh sieve or food mill to remove the skins and seeds. Return the strained cranberry pulp to the saucepan. Add 2 cups of sugar and cook over medium heat for 5 minutes, stirring constantly, until the sugar is dissolved and the jelly thickens slightly.
- 4Pour the hot cranberry jelly into a mold or individual glasses. Let cool completely at room temperature, then refrigerate for at least 2 hours to set completely.
