Corn Fritters
A simple and delicious recipe for corn fritters, perfect as a side dish or snack.
Ingredients
- 1 15-ounce can Canned Corn, drained (Can use fresh or frozen corn as well (about 1.5 cups))
- 1 cup All-Purpose Flour
- 1 teaspoon Baking Powder
- 2 teaspoons Salt
- 0.25 teaspoon Paprika
- 2 Eggs
- 0.5 cup Lard or Vegetable Oil (For frying)
Instructions
- 1If using canned corn, drain it well. If using fresh or frozen corn, chop it coarsely.
- 2In a medium bowl, whisk together the flour, baking powder, salt, and paprika.
- 3In a separate bowl, beat the egg yolks until thick and pale. In another clean bowl, beat the egg whites until stiff peaks form.
- 4Add the chopped corn and egg yolks to the dry ingredients and mix well. Gently fold in the beaten egg whites until just combined. Be careful not to overmix.
- 5Heat the lard or vegetable oil in a large frying pan over medium-high heat. Drop spoonfuls of the corn mixture into the hot oil, being careful not to overcrowd the pan. Cook for 2-3 minutes per side, or until golden brown and cooked through.
- 6Remove the fritters from the pan and drain on paper towels. Serve immediately.
