Corn Fritters

A simple and delicious recipe for corn fritters, perfect as a side dish or snack.

Ingredients

  • 1 15-ounce can Canned Corn, drained (Can use fresh or frozen corn as well (about 1.5 cups))
  • 1 cup All-Purpose Flour
  • 1 teaspoon Baking Powder
  • 2 teaspoons Salt
  • 0.25 teaspoon Paprika
  • 2 Eggs
  • 0.5 cup Lard or Vegetable Oil (For frying)

Instructions

  1. 1If using canned corn, drain it well. If using fresh or frozen corn, chop it coarsely.
  2. 2In a medium bowl, whisk together the flour, baking powder, salt, and paprika.
  3. 3In a separate bowl, beat the egg yolks until thick and pale. In another clean bowl, beat the egg whites until stiff peaks form.
  4. 4Add the chopped corn and egg yolks to the dry ingredients and mix well. Gently fold in the beaten egg whites until just combined. Be careful not to overmix.
  5. 5Heat the lard or vegetable oil in a large frying pan over medium-high heat. Drop spoonfuls of the corn mixture into the hot oil, being careful not to overcrowd the pan. Cook for 2-3 minutes per side, or until golden brown and cooked through.
  6. 6Remove the fritters from the pan and drain on paper towels. Serve immediately.
