A simple almond cookie, perfect for a light dessert or snack.

Ingredients

  • 2 Egg whites (Large eggs)
  • 0.75 cup Powdered sugar
  • 2 oz Almonds, blanched and finely chopped
  • 2 tablespoons Powdered sugar, for dusting (Approximately)

Instructions

  1. 1In a clean, dry bowl, beat the egg whites until stiff peaks form.
  2. 2Gradually add the powdered sugar to the beaten egg whites, beating continuously until well combined. Gently fold in the finely chopped almonds.
  3. 3On a lightly floured surface, roll the paste to about 1/4 inch thickness. Cut into strips approximately 3 1/2 inches long and 1 1/2 inches wide. Place the strips on a baking sheet lined with parchment paper. Spread a thin layer of the almond mixture onto each strip, leaving a small border around the edges.
  4. 4Dust the tops of the cookies with powdered sugar. Bake in a preheated moderate oven (350°F or 175°C) for 12-15 minutes, or until lightly golden.
  5. 5Remove the cookies from the oven and let them cool completely on the baking sheet before serving.
