A simple almond cookie, perfect for a light dessert or snack.
Ingredients
- 2 Egg whites (Large eggs)
- 0.75 cup Powdered sugar
- 2 oz Almonds, blanched and finely chopped
- 2 tablespoons Powdered sugar, for dusting (Approximately)
Instructions
- 1In a clean, dry bowl, beat the egg whites until stiff peaks form.
- 2Gradually add the powdered sugar to the beaten egg whites, beating continuously until well combined. Gently fold in the finely chopped almonds.
- 3On a lightly floured surface, roll the paste to about 1/4 inch thickness. Cut into strips approximately 3 1/2 inches long and 1 1/2 inches wide. Place the strips on a baking sheet lined with parchment paper. Spread a thin layer of the almond mixture onto each strip, leaving a small border around the edges.
- 4Dust the tops of the cookies with powdered sugar. Bake in a preheated moderate oven (350°F or 175°C) for 12-15 minutes, or until lightly golden.
- 5Remove the cookies from the oven and let them cool completely on the baking sheet before serving.
