Ingredients

  • 2 cups All-purpose flour (Original recipe calls for 1 3/4 cups, adjusted for modern portions)
  • 4 teaspoons Baking powder
  • 0.5 teaspoon Salt
  • 1.5 cups Milk
  • 2 Eggs (Separated)
  • 2 tablespoons Melted butter
  • 0 to serve Maple syrup

Instructions

  1. 1In a large bowl, whisk together the flour, baking powder, and salt.
  2. 2In a separate bowl, whisk together the milk and egg yolks. Stir in the melted butter.
  3. 3In a clean bowl, beat the egg whites until stiff peaks form.
  4. 4Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Do not overmix.
  5. 5Gently fold the beaten egg whites into the batter until just combined. Be careful not to deflate the egg whites.
  6. 6Preheat your waffle iron according to the manufacturer's instructions. Grease the waffle iron lightly with cooking spray or melted butter. Pour the batter onto the hot waffle iron, using about 1/2 cup of batter per waffle. Cook until golden brown and crispy, about 3-5 minutes per waffle.
