Classic Coffee Brewing
A modernized version of a classic coffee brewing method using an egg for clarifying, with options for small batches and single servings.
Ingredients
- 6 cups Water (Divided)
- 1 Egg (Optional, for clarifying)
- 0.5 cup Ground coffee (Adjust to taste)
Instructions
- 1Scald your coffee pot with hot water. This warms the pot and helps maintain the coffee's temperature.
- 2If using an egg for clarifying, wash it thoroughly. Break the egg into a small bowl and beat it lightly. Dilute the beaten egg with 1/4 cup of cold water. Crush the eggshell and add it to the egg mixture. Mix well with the coffee grounds.
- 3Turn the coffee and egg mixture (if using) into the scalded coffee pot. Pour the remaining 5 3/4 cups of boiling water over the coffee grounds. Stir thoroughly to ensure even saturation.
- 4Place the coffee pot on the stove and bring to a boil. Boil for 3 minutes. Reduce heat and let stand on the back of the range (or a low heat setting) for 10 minutes to allow the grounds to settle. Covering the spout with a paper towel can help retain aroma.
- 5Before serving, stir the coffee gently. Pour a small amount into a cup to check for grounds in the spout. Return to the pot and repeat if necessary. Serve immediately. If any coffee is left over, drain it from the grounds to prevent it from becoming bitter.
