Chocolate Charlotte

A simple and elegant chocolate dessert made with gelatin and cream.

Ingredients

  • 1 tablespoon Gelatine (Granulated gelatine)
  • 0.25 cup Cold water
  • 0.33 cup Heavy cream (Scalded)
  • 4 ounces Dark chocolate (Good quality, chopped)
  • 0.25 cup Granulated sugar (Optional, adjust to taste)

Instructions

  1. 1In a small bowl, sprinkle the gelatine over the cold water. Let it sit for 5-10 minutes to soften.
  2. 2In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer. Remove from heat.
  3. 3Add the chopped chocolate and sugar (if using) to the scalded cream. Stir until the chocolate is completely melted and the mixture is smooth.
  4. 4Add the bloomed gelatine to the chocolate mixture and stir until completely dissolved. Pour the mixture into individual ramekins or a small serving bowl. Refrigerate for at least 4 hours, or until set.
