Chocolate Caramels
A classic recipe for homemade chocolate caramels, perfect for gifting or enjoying as a sweet treat.
Ingredients
- 2.5 tablespoons Butter
- 2 cups Molasses
- 1 cup Brown sugar
- 0.5 cup Milk
- 3 ounces Semi-sweet chocolate (Original recipe calls for '3 squares chocolate')
- 1 teaspoon Vanilla extract
Instructions
- 1Put butter into a heavy-bottomed saucepan and melt over medium heat.
- 2Add molasses, brown sugar, and milk to the melted butter. Stir constantly until the sugar is dissolved.
- 3Once the mixture reaches a boil, add the chocolate, stirring constantly until the chocolate is completely melted and incorporated.
- 4Continue to boil the mixture, stirring constantly, until it reaches the firm ball stage. To test, drop a small amount of the mixture into a bowl of cold water. It should form a firm ball that you can easily shape with your fingers.
- 5Remove the saucepan from the heat and stir in the vanilla extract.
- 6Pour the caramel mixture into a buttered 8x8 inch pan. Let it cool completely at room temperature.
- 7Once the caramels are firm, cut them into small squares using a sharp knife. Wrap individually in wax paper if desired.
