Chocolate Caramels

A classic recipe for homemade chocolate caramels, perfect for gifting or enjoying as a sweet treat.

Ingredients

  • 2.5 tablespoons Butter
  • 2 cups Molasses
  • 1 cup Brown sugar
  • 0.5 cup Milk
  • 3 ounces Semi-sweet chocolate (Original recipe calls for '3 squares chocolate')
  • 1 teaspoon Vanilla extract

Instructions

  1. 1Put butter into a heavy-bottomed saucepan and melt over medium heat.
  2. 2Add molasses, brown sugar, and milk to the melted butter. Stir constantly until the sugar is dissolved.
  3. 3Once the mixture reaches a boil, add the chocolate, stirring constantly until the chocolate is completely melted and incorporated.
  4. 4Continue to boil the mixture, stirring constantly, until it reaches the firm ball stage. To test, drop a small amount of the mixture into a bowl of cold water. It should form a firm ball that you can easily shape with your fingers.
  5. 5Remove the saucepan from the heat and stir in the vanilla extract.
  6. 6Pour the caramel mixture into a buttered 8x8 inch pan. Let it cool completely at room temperature.
  7. 7Once the caramels are firm, cut them into small squares using a sharp knife. Wrap individually in wax paper if desired.
