Chestnut Gravy
A rich and savory gravy made with turkey drippings and mashed chestnuts, perfect for enhancing your holiday meals.
Ingredients
- 2 cups Turkey drippings (From roasted turkey)
- 0.75 cup Cooked and mashed chestnuts (About 1 pound fresh chestnuts before cooking)
- 2 tablespoons Butter
- 2 tablespoons All-purpose flour
- 1 cup Turkey stock or broth (If needed to thin gravy)
- 0.25 teaspoon Salt (Or to taste)
- 0.25 teaspoon Black pepper (Or to taste)
Instructions
- 1If using fresh chestnuts, preheat oven to 400°F (200°C). Cut an 'X' on the flat side of each chestnut. Roast for 20-30 minutes, or until the shells split open. Let cool slightly, then peel and mash. Alternatively, use pre-cooked chestnuts.
- 2In a saucepan, melt butter over medium heat. Whisk in flour and cook for 1-2 minutes, stirring constantly, until a smooth paste forms (a roux). Be careful not to burn it.
- 3Gradually whisk in the turkey drippings into the roux, ensuring no lumps form. Bring to a simmer, stirring constantly.
- 4Stir in the mashed chestnuts, salt, and pepper. Simmer for 5-10 minutes, stirring occasionally, to allow the flavors to meld. If the gravy is too thick, add turkey stock or broth to reach desired consistency.
- 5Serve hot over turkey, mashed potatoes, or stuffing.
