Celery Soup
A simple celery soup made with beef and marrow bone.
Ingredients
- 2 pounds Beef shin (Cut into 1-inch cubes)
- 1 piece Marrow bone
- 4 stalks Celery stalks (Chopped)
- 1 medium Onion (Chopped)
- 2 medium Carrots (Chopped)
- 8 cups Water
- 1 teaspoon Salt (Or to taste)
- 0.5 teaspoon Black pepper (Or to taste)
Instructions
- 1Wipe the beef shin and cut into 1-inch cubes. Divide the beef into two portions, approximately two-thirds and one-third.
- 2Place the larger portion (two-thirds) of the beef in a soup kettle and cover with water. Let it soak for 30 minutes.
- 3Brown the remaining beef (one-third) in a hot frying pan with the marrow from the marrow bone. Ensure the marrow is rendered and the beef is nicely browned.
- 4Add the browned beef and marrow bone to the soup kettle with the soaked beef. Add chopped celery, onion, and carrots. Add 8 cups of water. Bring to a boil, then reduce heat and simmer for at least 1.5 hours, or until the beef is very tender.
- 5Season with salt and pepper to taste. Remove the marrow bone before serving. Serve hot.
