Celery Soup

A simple celery soup made with beef and marrow bone.

Ingredients

  • 2 pounds Beef shin (Cut into 1-inch cubes)
  • 1 piece Marrow bone
  • 4 stalks Celery stalks (Chopped)
  • 1 medium Onion (Chopped)
  • 2 medium Carrots (Chopped)
  • 8 cups Water
  • 1 teaspoon Salt (Or to taste)
  • 0.5 teaspoon Black pepper (Or to taste)

Instructions

  1. 1Wipe the beef shin and cut into 1-inch cubes. Divide the beef into two portions, approximately two-thirds and one-third.
  2. 2Place the larger portion (two-thirds) of the beef in a soup kettle and cover with water. Let it soak for 30 minutes.
  3. 3Brown the remaining beef (one-third) in a hot frying pan with the marrow from the marrow bone. Ensure the marrow is rendered and the beef is nicely browned.
  4. 4Add the browned beef and marrow bone to the soup kettle with the soaked beef. Add chopped celery, onion, and carrots. Add 8 cups of water. Bring to a boil, then reduce heat and simmer for at least 1.5 hours, or until the beef is very tender.
  5. 5Season with salt and pepper to taste. Remove the marrow bone before serving. Serve hot.
