Celery Gingerbread
A savory twist on gingerbread, incorporating celery for a unique flavor profile. Inspired by traditional New York Gingerbread.
Ingredients
- 3 cups Celery (Cut into 1-inch pieces)
- 2 cups All-purpose flour
- 1 cup Molasses
- 0.5 cup Brown sugar
- 0.5 cup Unsalted butter (Softened)
- 2 teaspoons Ground ginger
- 1 teaspoon Ground cinnamon
- 1 teaspoon Baking soda
- 0.5 teaspoon Salt
- 2 large Eggs
- 0.5 cup Milk
Instructions
- 1Wash and cut the celery into 1-inch pieces.
- 2In a large bowl, cream together the softened butter and brown sugar until light and fluffy.
- 3Beat in the eggs one at a time, then stir in the molasses.
- 4In a separate bowl, whisk together the flour, ginger, cinnamon, baking soda, and salt.
- 5Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.
- 6Gently fold in the chopped celery.
- 7Pour batter into a greased and floured 9x13 inch baking pan. Bake at 350°F (175°C) for 35-40 minutes, or until a wooden skewer inserted into the center comes out clean.
- 8Let cool in the pan for 10 minutes before cutting into squares and serving.
