Celery Gingerbread

A savory twist on gingerbread, incorporating celery for a unique flavor profile. Inspired by traditional New York Gingerbread.

Ingredients

  • 3 cups Celery (Cut into 1-inch pieces)
  • 2 cups All-purpose flour
  • 1 cup Molasses
  • 0.5 cup Brown sugar
  • 0.5 cup Unsalted butter (Softened)
  • 2 teaspoons Ground ginger
  • 1 teaspoon Ground cinnamon
  • 1 teaspoon Baking soda
  • 0.5 teaspoon Salt
  • 2 large Eggs
  • 0.5 cup Milk

Instructions

  1. 1Wash and cut the celery into 1-inch pieces.
  2. 2In a large bowl, cream together the softened butter and brown sugar until light and fluffy.
  3. 3Beat in the eggs one at a time, then stir in the molasses.
  4. 4In a separate bowl, whisk together the flour, ginger, cinnamon, baking soda, and salt.
  5. 5Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.
  6. 6Gently fold in the chopped celery.
  7. 7Pour batter into a greased and floured 9x13 inch baking pan. Bake at 350°F (175°C) for 35-40 minutes, or until a wooden skewer inserted into the center comes out clean.
  8. 8Let cool in the pan for 10 minutes before cutting into squares and serving.
