Beaten Fried Drop Cakes

These are small, sweet cakes that are fried until golden brown. The recipe follows the method for Fried Drop Cakes.

Ingredients

  • 1 cup Flour
  • 0.25 cup Sugar
  • 1 Egg
  • 0.5 cup Milk
  • 2 tablespoons Butter, melted
  • 2 cups Oil, for frying (Vegetable or canola oil)

Instructions

  1. 1In a bowl, combine the flour and sugar.
  2. 2In a separate bowl, whisk together the egg, milk, and melted butter. Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
  3. 3Heat the oil in a deep fryer or large pot to 350°F (175°C).
  4. 4Drop spoonfuls of batter into the hot oil. Fry for 2-3 minutes per side, or until golden brown. Do not overcrowd the pot.
  5. 5Remove the fried cakes with a slotted spoon and place them on a paper towel-lined plate to drain excess oil. Serve warm.
