Banana Croquettes

A simple dessert of fried banana slices coated in breadcrumbs.

Ingredients

  • 4 medium Bananas (Choose ripe but firm bananas.)
  • 1 cup Breadcrumbs (Use plain breadcrumbs.)
  • 2 large Eggs (Lightly beaten.)
  • 2 cups Vegetable oil (For deep frying.)

Instructions

  1. 1Peel the bananas. Gently scrape the surface of the banana with a knife to remove any astringent layer close to the skin. Cut each banana in half crosswise, then remove a small slice from each end.
  2. 2Dip each banana piece in breadcrumbs, then in the beaten egg, and then in breadcrumbs again, ensuring they are fully coated.
  3. 3Heat the vegetable oil in a deep fryer or large pot to 350°F (175°C). Carefully place the breaded banana pieces into the hot oil, ensuring not to overcrowd the fryer. Fry for 2-3 minutes, or until golden brown on all sides.
  4. 4Remove the fried banana croquettes from the oil with a slotted spoon and place them on a plate lined with paper towels to drain excess oil. Serve immediately while warm.
