Baked Apple Tapioca Pudding
A simple and comforting baked apple pudding with tapioca, perfect for a cozy dessert.
Ingredients
- 2.5 cups Boiling water
- 0.5 teaspoon Salt
- 4 medium Sour apples (such as Granny Smith) (Original recipe calls for 7 apples, which is a lot for a small pudding dish. Reduced to 4.)
- 0.5 cup Granulated sugar
- 0.25 cup Small pearl tapioca (Minute tapioca can be used without soaking.)
- 1 tablespoon Butter (For greasing the dish)
- 0.5 cup Heavy cream or vanilla ice cream (For serving)
Instructions
- 1If using small pearl tapioca, soak it in cold water to cover for 1 hour. Drain well before using. If using minute tapioca, skip this step.
- 2In a saucepan, combine the drained tapioca (or minute tapioca), boiling water, and salt. Cook over medium heat, stirring constantly, until the tapioca becomes transparent, about 10-15 minutes.
- 3Preheat oven to 350°F (175°C). Core and peel the apples. Cut them into quarters or eighths, depending on their size.
- 4Grease a baking dish with butter. Arrange the apple slices in the dish. Sprinkle the sugar evenly over the apples. Pour the cooked tapioca mixture over the apples. Bake in the preheated oven for 30-40 minutes, or until the apples are soft and tender.
- 5Let the pudding cool slightly before serving. Serve warm with cream or vanilla ice cream.
