Bacon-Wrapped Chicken with Herbs

A simple and flavorful baked chicken dish featuring bacon, green pepper, and chives.

Ingredients

  • 2 halves Chicken halves (About 2-3 pounds total)
  • 1 teaspoon Salt (Or to taste)
  • 0.5 teaspoon Black pepper (Or to taste)
  • 2 tablespoons Green pepper (Finely chopped)
  • 1 tablespoon Fresh chives (Finely chopped)
  • 8 strips Bacon strips (Thinly cut)

Instructions

  1. 1Preheat oven to 400°F (200°C). Split and clean the chicken halves. Pat them dry with paper towels.
  2. 2Place the chicken halves in a baking dish or roasting pan. Sprinkle with salt, pepper, finely chopped green pepper, and finely cut chives.
  3. 3Cover the chicken halves with thinly cut strips of bacon, arranging them to cover as much of the chicken as possible.
  4. 4Bake in the preheated oven for 25-35 minutes, or until the chicken is cooked through and the bacon is crispy. Chicken is done when a meat thermometer inserted into the thickest part registers 165°F (74°C).
  5. 5Remove the chicken to a serving dish and serve immediately.
