Bacon-Blanketed Chicken

Chicken broilers seasoned with green pepper and chives, then covered in bacon and baked until tender.

Ingredients

  • 2 small (about 2-3 lbs each) Chicken Broilers (Split and cleaned)
  • 1 teaspoon Salt (or to taste)
  • 0.5 teaspoon Black Pepper (freshly ground, or to taste)
  • 2 tablespoons Green Bell Pepper (finely chopped)
  • 1 tablespoon Fresh Chives (finely cut)
  • 8 slices Bacon Strips (thinly cut)

Instructions

  1. 1Preheat oven to 400°F (200°C). Split and clean the chicken broilers. Pat them dry with paper towels.
  2. 2Place the chicken in a dripping pan or baking dish. Sprinkle with salt, pepper, finely chopped green bell pepper, and finely cut chives.
  3. 3Cover the chicken with thinly cut strips of bacon, ensuring the entire surface is covered.
  4. 4Bake in the preheated oven for 30-35 minutes, or until the chicken is tender and the bacon is crispy. Check the internal temperature of the chicken to ensure it reaches 165°F (74°C).
  5. 5Remove the chicken from the oven and let it rest for a few minutes before serving. Transfer to a serving dish and serve immediately.
