Bacon-Blanketed Chicken
Chicken broilers seasoned with green pepper and chives, then covered in bacon and baked until tender.
Ingredients
- 2 small (about 2-3 lbs each) Chicken Broilers (Split and cleaned)
- 1 teaspoon Salt (or to taste)
- 0.5 teaspoon Black Pepper (freshly ground, or to taste)
- 2 tablespoons Green Bell Pepper (finely chopped)
- 1 tablespoon Fresh Chives (finely cut)
- 8 slices Bacon Strips (thinly cut)
Instructions
- 1Preheat oven to 400°F (200°C). Split and clean the chicken broilers. Pat them dry with paper towels.
- 2Place the chicken in a dripping pan or baking dish. Sprinkle with salt, pepper, finely chopped green bell pepper, and finely cut chives.
- 3Cover the chicken with thinly cut strips of bacon, ensuring the entire surface is covered.
- 4Bake in the preheated oven for 30-35 minutes, or until the chicken is tender and the bacon is crispy. Check the internal temperature of the chicken to ensure it reaches 165°F (74°C).
- 5Remove the chicken from the oven and let it rest for a few minutes before serving. Transfer to a serving dish and serve immediately.
