Aromatic Vegetable Broth Base
A simple aromatic vegetable broth base, perfect for soups, stews, and sauces. This recipe provides a foundation of flavor using classic aromatics.
Ingredients
- 2 stalks Celery stalks (Broken into pieces)
- 2 slices Carrot (Cut into cubes)
- 1 small Small onion (Roughly chopped)
- 3 tablespoons Butter (Unsalted)
- 1 sprig Fresh parsley
- 2 whole Whole cloves
- 0.5 teaspoon Black peppercorns
- 1 small Bay leaf (Fresh or dried)
- 1 blade Blade of mace
- 1 teaspoon Salt (Or to taste)
- 8 cups Water
Instructions
- 1Wash and roughly chop the celery, carrots, and onion. Break the celery into smaller pieces. Cube the carrots.
- 2In a large pot, melt the butter over medium heat. Add the celery, carrots, and onion and sauté for 5-7 minutes, or until the onions are translucent and slightly softened.
- 3Add the parsley, cloves, peppercorns, bay leaf, mace, salt, and water to the pot. Bring to a boil, then reduce heat to low and simmer for at least 30 minutes, or up to an hour, to allow the flavors to meld.
- 4Carefully strain the broth through a fine-mesh sieve or cheesecloth to remove the solids. Discard the solids.
