Apple Cake
A simple apple cake made with a soft dough, topped with apples, cinnamon, sugar, and currants.
Ingredients
- 3 cups All-purpose flour (Adjust as needed for a soft dough)
- 0.5 cup Butter, melted
- 5 medium Sour apples (Granny Smith or similar)
- 0.5 cup Granulated sugar (Divided)
- 1 teaspoon Ground cinnamon (Divided)
- 2 tablespoons Currants
- 0.25 ounce Active dry yeast (Or 1 cake compressed yeast)
- 2 Eggs
- 1 cup Milk, scalded and cooled to lukewarm
Instructions
- 1In a large bowl, combine the melted butter and lukewarm milk. Add 1/4 cup sugar and 1/2 teaspoon cinnamon. Stir to combine.
- 2Add the yeast and unbeaten eggs to the mixture. Stir well.
- 3Gradually add flour to make a soft dough. Cover the bowl and let the dough rise in a warm place until doubled in size (about 1-1.5 hours).
- 4Punch down the dough to release the air. Cover and let rise again for about 30 minutes.
- 5Preheat oven to 350°F (175°C). Grease a 9x13 inch baking pan. Spread the dough thinly in the prepared pan and brush with melted butter.
- 6Peel, core, and cut the apples into eighths. Press the sharp edges of the apple slices into the dough in parallel rows lengthwise of the pan.
- 7Sprinkle the apples with the remaining 1/4 cup sugar mixed with 1/2 teaspoon cinnamon. Sprinkle with currants. Cover and let rise for 20 minutes.
- 8Bake in the preheated oven for 30 minutes, or until golden brown.
- 9Let cool slightly before cutting into squares and serving hot or cold. Serve with whipped cream, sweetened and flavored, if desired.
