Anchovy Macaroni and Egg Salad
A simple and flavorful salad featuring hard-boiled eggs, macaroni, cheese, and a hint of anchovy.
Ingredients
- 5 Large Eggs (Hard-boiled)
- 1 cup Cooked Macaroni
- 0.5 cup Shredded Cheddar Cheese
- 0.5 teaspoon Anchovy Essence (Or 1-2 anchovy fillets, finely minced)
- 2 tablespoons Mayonnaise
- 0.25 teaspoon Black Pepper (Freshly ground)
Instructions
- 1Place the eggs in a saucepan and cover with cold water. Bring to a boil over medium-high heat. Once boiling, remove from heat, cover, and let sit for 10 minutes. After 10 minutes, drain the hot water and immediately rinse the eggs with cold water until they are cool enough to handle.
- 2Gently tap the eggs on a hard surface to crack the shells. Peel the eggs under cold running water. Chop the peeled eggs into small pieces.
- 3In a medium bowl, combine the chopped eggs, cooked macaroni, shredded cheddar cheese, anchovy essence (or minced anchovies), mayonnaise, and black pepper. Mix well to combine.
- 4Serve immediately or chill for later. This salad is great on its own, as a side dish, or in a sandwich.
