Sweet Ravioli (Ravioli Dolce)

A sweet version of ravioli, filled with a ricotta cheese mixture and fried until golden brown. Served with powdered sugar.

Ingredients

  • 250 grams All-purpose flour (About 1 pound)
  • 1 tablespoon Unsalted butter, softened
  • 2 tablespoons Lard, softened
  • 225 grams Ricotta cheese (About 1/2 pound)
  • 1 Large egg
  • 1 Large egg yolk
  • 2 tablespoons Granulated sugar
  • 2 drops Vanilla extract
  • 500 ml Lard, for frying (Approximately, adjust as needed for deep frying)
  • 2 tablespoons Powdered sugar (For dusting)

Instructions

  1. 1In a large bowl, combine the flour, butter, and lard. Work the ingredients together with your hands or a pastry blender until a smooth dough forms.
  2. 2On a lightly floured surface, roll out the dough thinly.
  3. 3In a separate bowl, combine the ricotta cheese, egg, egg yolk, granulated sugar, and vanilla extract. Mix well until smooth.
  4. 4Place small spoonfuls of the ricotta filling onto the rolled-out dough, spacing them evenly apart. Fold the dough over the filling and cut into individual ravioli squares or circles. Seal the edges well.
  5. 5Heat lard in a deep fryer or large pot to 350°F (175°C). Fry the ravioli in batches until golden brown, about 2-3 minutes per side.
  6. 6Remove the fried ravioli with a slotted spoon and place them on a paper towel-lined plate to drain excess oil. Dust with powdered sugar and serve immediately.
