Sweet Ravioli (Ravioli Dolce)
A sweet version of ravioli, filled with a ricotta cheese mixture and fried until golden brown. Served with powdered sugar.
Ingredients
- 250 grams All-purpose flour (About 1 pound)
- 1 tablespoon Unsalted butter, softened
- 2 tablespoons Lard, softened
- 225 grams Ricotta cheese (About 1/2 pound)
- 1 Large egg
- 1 Large egg yolk
- 2 tablespoons Granulated sugar
- 2 drops Vanilla extract
- 500 ml Lard, for frying (Approximately, adjust as needed for deep frying)
- 2 tablespoons Powdered sugar (For dusting)
Instructions
- 1In a large bowl, combine the flour, butter, and lard. Work the ingredients together with your hands or a pastry blender until a smooth dough forms.
- 2On a lightly floured surface, roll out the dough thinly.
- 3In a separate bowl, combine the ricotta cheese, egg, egg yolk, granulated sugar, and vanilla extract. Mix well until smooth.
- 4Place small spoonfuls of the ricotta filling onto the rolled-out dough, spacing them evenly apart. Fold the dough over the filling and cut into individual ravioli squares or circles. Seal the edges well.
- 5Heat lard in a deep fryer or large pot to 350°F (175°C). Fry the ravioli in batches until golden brown, about 2-3 minutes per side.
- 6Remove the fried ravioli with a slotted spoon and place them on a paper towel-lined plate to drain excess oil. Dust with powdered sugar and serve immediately.
