String Beans with Tomatoes
A simple and flavorful side dish of string beans cooked with tomatoes, onions, and herbs.
Ingredients
- 1 pound String beans (Young and tender)
- 2 tablespoons Olive oil (Good quality)
- 0.5 medium Onion (Chopped)
- 2 tablespoons Fresh parsley (Chopped)
- 0.5 teaspoon Salt (Or to taste)
- 0.25 teaspoon Black pepper (Freshly ground, or to taste)
- 1 cup Tomatoes (Fresh, chopped, or tomato conserve)
Instructions
- 1Wash the string beans in cold water. Cut off the ends and string them if necessary. Drain well.
- 2Place the wet string beans in a baking dish. Add olive oil, chopped onion, chopped parsley, salt, and pepper. Mix well.
- 3Cover the baking dish and cook on the stovetop over low heat. Cook slowly, stirring occasionally, until the beans begin to soften, about 15 minutes.
- 4Add the chopped tomatoes (or tomato conserve) to the baking dish. Stir gently. Continue to cook, covered, over low heat until the beans are tender and the tomatoes have softened, about 15 minutes. Be careful not to let the beans burn, adding a little water if necessary.
