Stracciatella Soup
A simple and comforting Italian egg drop soup, perfect for a light meal or starter.
Ingredients
- 2 Egg
- 0.0625 cup Parmesan cheese, grated
- 0.0625 cup Bread crumbs
- 4 cups Chicken broth
- 0.25 teaspoon Salt (Or to taste)
Instructions
- 1In a bowl, beat the egg(s) together with salt using a fork until well combined.
- 2Add the grated Parmesan cheese and bread crumbs to the egg mixture. Mix well until everything is evenly distributed.
- 3In a saucepan, bring the chicken broth to a rolling boil over medium-high heat.
- 4Reduce the heat slightly to maintain a gentle boil. Slowly pour the egg mixture into the boiling broth, stirring constantly with a fork to create thin strands of egg. Continue stirring to prevent the egg from clumping together.
- 5Let the soup simmer for 2-3 minutes, stirring occasionally, until the egg strands are cooked through. Serve immediately.
