Rice with Peas

Rice with Peas

A simple and flavorful rice dish with peas, Parmesan cheese, and a hint of onion and herbs.

Ingredients

  • 1 cup Long-grain rice
  • 2 tablespoons Butter
  • 1 tablespoon Grated Parmesan cheese (Plus extra for serving)
  • 0.5 Small onion (Finely chopped)
  • 3 cups Hot water (Approximately)
  • 1 small piece Ham fat (About 1 tablespoon, finely chopped)
  • 1 tablespoon Fresh parsley (Finely chopped)
  • 3 tablespoons Olive oil
  • 0.25 teaspoon Salt (To taste)
  • 0.125 teaspoon Black pepper (To taste)
  • 1 can Green peas (Drained, or 1 cup fresh/frozen)
  • 1 cup Vegetable broth (Or water)

Instructions

  1. 1Finely chop the onion. In a saucepan, melt half the butter (1 tablespoon) over medium heat. Add the chopped onion and cook until softened and lightly browned.
  2. 2Add the raw rice to the saucepan and fry, stirring constantly, until the rice is dry and lightly toasted.
  3. 3Add hot water, a ladleful at a time, stirring frequently. Ensure the rice doesn't boil too hard. Continue adding water until the rice is cooked through and the water is absorbed.
  4. 4Finely chop the ham fat, parsley, and remaining half of the onion. In a separate saucepan, heat the olive oil over medium heat. Add the chopped ham fat, onion, and parsley. Cook until the onion is colored. Add the green peas, salt, and pepper. Cook until the peas have absorbed the olive oil. Add the vegetable broth (or water) to cover the peas and cook until the peas are soft.
  5. 5Once the rice is cooked, remove the saucepan from the heat. Stir in the remaining butter and a little grated Parmesan cheese. Add the cooked peas to the rice and mix well. Serve immediately with additional Parmesan cheese, if desired.
