Rice Soup (Minestra di Riso)
A simple and comforting rice soup made with meat stock. A classic Italian dish, perfect for a light meal or when feeling under the weather.
Ingredients
- 4 cups Meat stock (Beef or chicken stock works well)
- 1.5 tablespoons Rice (Arborio or short-grain rice recommended)
- 1 cup Water (For pre-boiling the rice)
- 0.25 teaspoon Salt (To taste)
- 1 tablespoon Grated Parmesan cheese (For serving (optional))
Instructions
- 1In a small saucepan, combine the rice and water. Bring to a boil over medium-high heat. Boil for 10 minutes.
- 2Drain the rice using a fine-mesh sieve or colander.
- 3In a medium saucepan, bring the meat stock to a simmer over medium heat. Add the drained rice and salt. Simmer for 5-10 minutes, or until the rice is tender and the soup has thickened slightly.
- 4Serve hot, garnished with grated Parmesan cheese, if desired.
