Pumpkin Parmigiana
A simple and comforting dish of pumpkin slices cooked with butter, allspice, and Parmesan cheese. Can be served pan-fried or baked for a gratin-style dish.
Ingredients
- 1 pound Pumpkin (About 1 pound after removing rind and seeds)
- 4 cups Water (For boiling)
- 0.5 teaspoon Salt (For boiling water)
- 2 tablespoons Butter (For frying)
- 0.25 teaspoon Salt (For frying)
- 0.125 teaspoon Allspice (Pinch of allspice)
- 0.5 cup Parmesan cheese (Grated)
- 2 tablespoons Butter (Melted, for serving (optional))
Instructions
- 1Peel the pumpkin, remove the seeds, and cut into roughly 1-inch square pieces. Then slice these pieces into slivers about 1/8 inch thick.
- 2Bring the water to a boil in a saucepan. Add the salt. Add the pumpkin slivers and boil for 1 minute. Drain well.
- 3Melt the butter in a saucepan over medium heat. Add the drained pumpkin, salt, and allspice. Fry, stirring occasionally, until the pumpkin is lightly browned and tender, about 5-7 minutes.
- 4Serve the fried pumpkin hot, sprinkled with grated Parmesan cheese and drizzled with melted butter (optional). Alternatively, transfer the fried pumpkin to a baking dish, sprinkle with Parmesan cheese, and bake in a preheated oven at 375°F (190°C) until the cheese is melted and lightly browned, about 10 minutes.
