Potato Gnocchi
A simple and classic potato gnocchi recipe, served with a savory sauce and cheese.
Ingredients
- 1.5 pounds Potatoes (About 6 medium-sized potatoes)
- 1 teaspoon Salt (To taste)
- 1 cup All-purpose flour (Plus more for dusting)
- 2 quarts Water (For boiling gnocchi)
- 2 teaspoons Salt (For boiling water)
- 1 cup Gravy (Your favorite gravy recipe)
- 0.5 cup Grated Parmesan cheese (Plus more for topping)
Instructions
- 1Place the potatoes in a large pot and cover with cold water. Bring to a boil and cook until tender, about 20-25 minutes. A knife should easily pierce through the center.
- 2Drain the potatoes and let them cool slightly until you can handle them. Peel the potatoes and pass them through a potato ricer or fine colander into a large bowl.
- 3Add salt to the mashed potatoes. Gradually add the flour, mixing with your hands until a soft dough forms. Be careful not to overwork the dough.
- 4Lightly flour a clean work surface. Divide the dough into several portions. Roll each portion into a long rope about 3/4 inch thick. Cut the rope into 1-inch pieces. Gently press each piece with a fork to create ridges.
- 5Bring the water and salt to a boil in a large pot. Add the gnocchi in batches. Cook until they rise to the surface, about 2-3 minutes. Remove with a slotted spoon.
- 6Place the cooked gnocchi in a serving dish. Top with gravy and grated Parmesan cheese. Serve immediately.
