Polenta with Chopped Sausages
A hearty dish of creamy polenta layered with savory chopped sausages in a tomato sauce and topped with grated cheese.
Ingredients
- 1 cup Polenta (coarse cornmeal) (For a creamy polenta)
- 4 cups Water
- 0.5 teaspoon Salt
- 2 tablespoons Butter
- 4 links Italian sausages (sweet or hot) (About 1 pound)
- 1 tablespoon Olive oil
- 0.5 medium Onion (Chopped)
- 2 cloves Garlic (Minced)
- 2 tablespoons Tomato paste
- 0.25 cup Chicken stock
- 0.5 cup Grated Parmesan cheese
Instructions
- 1In a large saucepan, bring water and salt to a boil. Gradually whisk in the polenta, ensuring no lumps form. Reduce heat to low and cook, stirring frequently, for about 20-30 minutes, or until the polenta is thick and creamy. Stir in butter.
- 2Remove the sausage from their casings. Chop the sausage meat finely. In a skillet, heat olive oil over medium heat. Add chopped onion and cook until softened, about 5 minutes. Add minced garlic and cook for another minute until fragrant. Add the chopped sausage and cook, breaking it up with a spoon, until browned. Stir in tomato paste and chicken stock. Bring to a simmer and cook for 15 minutes, stirring occasionally.
- 3Cut the polenta into slices. Layer the polenta slices in a serving dish or individual bowls. Top with the sausage sauce and grated Parmesan cheese. Serve immediately.
