Modern Tomato Sauce
A classic tomato sauce made with a roux base, perfect for pasta, pizza, or as a base for other sauces.
Ingredients
- 1 tablespoon Butter
- 1 tablespoon All-purpose flour
- 28 ounces Canned crushed tomatoes
- 1 cup Vegetable stock
- 0.5 teaspoon Salt (Or to taste)
- 0.25 teaspoon Black pepper (Or to taste)
Instructions
- 1In a medium saucepan, melt the butter over medium heat. Add the flour and cook for 3 minutes, stirring constantly, until a smooth paste forms. This is the roux.
- 2Remove the roux from the heat. Gradually pour in the crushed tomatoes, stirring constantly to prevent lumps from forming. Add the vegetable stock and stir to combine.
- 3Return the saucepan to medium heat. Bring the sauce to a simmer, then reduce the heat to low and cook for 20 minutes, stirring occasionally, until the sauce has thickened slightly.
- 4Season the tomato sauce with salt and black pepper to taste. Serve hot over pasta, pizza, or as desired.
