Modern Tomato Sauce

A classic tomato sauce made with a roux base, perfect for pasta, pizza, or as a base for other sauces.

Ingredients

  • 1 tablespoon Butter
  • 1 tablespoon All-purpose flour
  • 28 ounces Canned crushed tomatoes
  • 1 cup Vegetable stock
  • 0.5 teaspoon Salt (Or to taste)
  • 0.25 teaspoon Black pepper (Or to taste)

Instructions

  1. 1In a medium saucepan, melt the butter over medium heat. Add the flour and cook for 3 minutes, stirring constantly, until a smooth paste forms. This is the roux.
  2. 2Remove the roux from the heat. Gradually pour in the crushed tomatoes, stirring constantly to prevent lumps from forming. Add the vegetable stock and stir to combine.
  3. 3Return the saucepan to medium heat. Bring the sauce to a simmer, then reduce the heat to low and cook for 20 minutes, stirring occasionally, until the sauce has thickened slightly.
  4. 4Season the tomato sauce with salt and black pepper to taste. Serve hot over pasta, pizza, or as desired.
