Modern Involtini of Beef "alia Siciliana"
Thin slices of beef rolled with a savory filling of ham, breadcrumbs, and herbs, then broiled to perfection. A classic Sicilian dish updated for the modern kitchen.
Ingredients
- 0.75 pound Beef sirloin or round, thinly sliced (About 6 thin slices)
- 2 ounces Cooked ham, finely diced
- 1 tablespoon Butter
- 0.5 cup Fresh bread crumbs
- 2 tablespoons Fresh parsley, finely chopped
- 0.5 small Small onion, finely chopped
- 0.25 teaspoon Salt
- 0.25 teaspoon Black pepper
- 0.125 teaspoon Ground nutmeg
- 2 tablespoons Olive oil (For brushing)
- 6 slices Bread slices (For frying)
Instructions
- 1In a saucepan, melt the butter over medium heat. Add the chopped onion and cook until softened and translucent. Add the diced ham and chopped parsley. Cook for 2 minutes, stirring occasionally. Add the bread crumbs, salt, pepper, and nutmeg. Mix well and cook for another minute until heated through. Remove from heat and let cool slightly.
- 2Place each beef slice between two sheets of plastic wrap. Using a meat mallet or rolling pin, pound the slices to flatten them to about 1/4 inch thickness. Lightly salt each slice.
- 3Place a portion of the filling (about 1-2 tablespoons) on each slice of meat. Roll up the meat tightly, like small sausages. Secure each roll with a toothpick or kitchen twine.
- 4Cut the bread slices into roughly 1-inch cubes. Heat a tablespoon of olive oil in a pan over medium heat. Fry the bread cubes until golden brown on all sides. Set aside.
- 5Thread the involtini onto skewers, alternating with the fried bread cubes.
- 6Brush the skewers with olive oil and roll them in fresh bread crumbs. Broil on a gridiron or baking sheet under a preheated broiler, turning occasionally, until the meat is cooked through and the bread crumbs are golden brown (about 10-15 minutes).
