Modern Involtini of Beef "alia Siciliana"

Thin slices of beef rolled with a savory filling of ham, breadcrumbs, and herbs, then broiled to perfection. A classic Sicilian dish updated for the modern kitchen.

Ingredients

  • 0.75 pound Beef sirloin or round, thinly sliced (About 6 thin slices)
  • 2 ounces Cooked ham, finely diced
  • 1 tablespoon Butter
  • 0.5 cup Fresh bread crumbs
  • 2 tablespoons Fresh parsley, finely chopped
  • 0.5 small Small onion, finely chopped
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.125 teaspoon Ground nutmeg
  • 2 tablespoons Olive oil (For brushing)
  • 6 slices Bread slices (For frying)

Instructions

  1. 1In a saucepan, melt the butter over medium heat. Add the chopped onion and cook until softened and translucent. Add the diced ham and chopped parsley. Cook for 2 minutes, stirring occasionally. Add the bread crumbs, salt, pepper, and nutmeg. Mix well and cook for another minute until heated through. Remove from heat and let cool slightly.
  2. 2Place each beef slice between two sheets of plastic wrap. Using a meat mallet or rolling pin, pound the slices to flatten them to about 1/4 inch thickness. Lightly salt each slice.
  3. 3Place a portion of the filling (about 1-2 tablespoons) on each slice of meat. Roll up the meat tightly, like small sausages. Secure each roll with a toothpick or kitchen twine.
  4. 4Cut the bread slices into roughly 1-inch cubes. Heat a tablespoon of olive oil in a pan over medium heat. Fry the bread cubes until golden brown on all sides. Set aside.
  5. 5Thread the involtini onto skewers, alternating with the fried bread cubes.
  6. 6Brush the skewers with olive oil and roll them in fresh bread crumbs. Broil on a gridiron or baking sheet under a preheated broiler, turning occasionally, until the meat is cooked through and the bread crumbs are golden brown (about 10-15 minutes).
