Modern Bechamel Sauce

Ingredients

  • 2 tablespoons Butter
  • 2 tablespoons All-purpose flour
  • 1.5 cups Milk
  • 0.25 teaspoon Ground nutmeg
  • 5 whole White peppercorns
  • 0.125 teaspoon Salt
  • 0.25 cup Mushrooms, finely chopped

Instructions

  1. 1In a medium saucepan, melt the butter over medium heat. Add the flour and stir constantly with a whisk for 5 minutes to create a smooth roux. Be careful not to brown the butter.
  2. 2Gradually pour in the boiling milk, whisking constantly to prevent lumps from forming. Continue whisking until the sauce is smooth. Add the nutmeg, peppercorns, salt, and chopped mushrooms.
  3. 3Reduce heat to low and simmer for 15 minutes, stirring occasionally to prevent sticking. Remove from heat and rub the sauce through a fine-mesh sieve to remove any lumps or peppercorns for an ultra-smooth sauce.
