Macaroni with Tomato Sauce

A simple and flavorful tomato sauce for macaroni, perfect for a quick and easy meal.

Ingredients

  • 1 pound Macaroni (Elbow macaroni or other small pasta shape)
  • 7 medium Tomatoes (Fresh or canned, about 28 ounces)
  • 4 tablespoons Olive oil (Good quality olive oil)
  • 0.25 cup Parsley (Fresh parsley, chopped)
  • 1 teaspoon Salt (Or to taste)
  • 0.5 teaspoon Black pepper (Freshly ground, or to taste)

Instructions

  1. 1Slice the tomatoes (if using fresh). Chop the parsley.
  2. 2In a saucepan, heat the olive oil over medium heat. Add the sliced tomatoes, salt, and pepper. Stir occasionally and cook until the sauce thickens to the consistency of thick cream, about 20-25 minutes.
  3. 3Strain the tomato sauce through a sieve or food mill to remove seeds and skins, if desired. This step is optional but will result in a smoother sauce.
  4. 4Cook the macaroni according to package directions until al dente. Drain well.
  5. 5Add the cooked macaroni to the tomato sauce. Stir to coat. Garnish with chopped parsley. Serve immediately.
