Macaroni with Tomato Sauce
A simple and flavorful tomato sauce for macaroni, perfect for a quick and easy meal.
Ingredients
- 1 pound Macaroni (Elbow macaroni or other small pasta shape)
- 7 medium Tomatoes (Fresh or canned, about 28 ounces)
- 4 tablespoons Olive oil (Good quality olive oil)
- 0.25 cup Parsley (Fresh parsley, chopped)
- 1 teaspoon Salt (Or to taste)
- 0.5 teaspoon Black pepper (Freshly ground, or to taste)
Instructions
- 1Slice the tomatoes (if using fresh). Chop the parsley.
- 2In a saucepan, heat the olive oil over medium heat. Add the sliced tomatoes, salt, and pepper. Stir occasionally and cook until the sauce thickens to the consistency of thick cream, about 20-25 minutes.
- 3Strain the tomato sauce through a sieve or food mill to remove seeds and skins, if desired. This step is optional but will result in a smoother sauce.
- 4Cook the macaroni according to package directions until al dente. Drain well.
- 5Add the cooked macaroni to the tomato sauce. Stir to coat. Garnish with chopped parsley. Serve immediately.
