Macaroni "alia San Giovannello"
A simple and flavorful pasta dish with tomatoes, ham fat, and Parmesan cheese.
Ingredients
- 0.75 pound Macaroni
- 6 cups Water (For boiling the macaroni)
- 1 teaspoon Salt (For boiling the macaroni)
- 2 ounces Ham fat (Diced)
- 2 tablespoons Fresh parsley (Chopped)
- 6 number Medium-sized tomatoes (Peeled, seeded, and chopped)
- 1 tablespoon Butter
- 0.25 teaspoon Salt (For tomatoes)
- 0.25 teaspoon Black pepper (For tomatoes)
- 0.5 cup Grated Parmesan cheese (For serving)
Instructions
- 1Bring salted water to a boil in a large pot. Add the macaroni and cook according to package directions until al dente. Drain the macaroni and set aside.
- 2Chop the ham fat and parsley finely. Peel the tomatoes, cut them open, remove the seeds and any hard or unripe parts, and slice them.
- 3In a frying pan, melt the butter over medium heat. Add the chopped ham fat. When the grease is colored (slightly browned), add the sliced tomatoes, salt, and pepper. Cook until the tomatoes are softened and begin to sputter, about 10 minutes.
- 4Add the drained macaroni to the pan with the tomato sauce. Mix well to combine. Stir in grated Parmesan cheese. Serve immediately.
