Lima Beans with Ham

A simple and savory side dish featuring tender lima beans cooked with ham, onion, and parsley, finished with a touch of stock and served with fried bread.

Ingredients

  • 12 ounces Lima Beans, fresh or frozen (Use tender, young lima beans. If using frozen, thaw before cooking.)
  • 1 tablespoon Butter
  • 2 tablespoons Fresh Parsley, chopped
  • 0.5 medium Small Onion, finely chopped
  • 3 ounces Raw Ham, diced
  • 3 tablespoons Chicken or Vegetable Stock
  • 2 slices Bread, cubed (For fried bread dice)
  • 1 tablespoon Oil (For frying bread)
  • 0.25 teaspoon Salt (To taste)
  • 0.25 teaspoon Black Pepper (To taste)

Instructions

  1. 1If using fresh lima beans, bring a pot of water to a boil. Add the lima beans and blanch for 5 minutes to whiten them. Drain the beans.
  2. 2In a saucepan, melt the butter over medium heat. Add the chopped onion and cook until softened and translucent, about 5 minutes. Add the diced ham and cook until lightly browned, about 3 minutes.
  3. 3Add the blanched lima beans and chopped parsley to the saucepan. Season with salt and pepper. Stir in the chicken or vegetable stock. Bring to a simmer, then reduce heat and cook until the lima beans are tender, about 10 minutes.
  4. 4While the lima beans are simmering, heat the oil in a skillet over medium heat. Add the cubed bread and fry until golden brown and crispy, about 5 minutes. Drain on paper towels.
  5. 5Serve the lima beans hot, garnished with the dice of fried bread.
