Lima Beans with Ham
A simple and savory side dish featuring tender lima beans cooked with ham, onion, and parsley, finished with a touch of stock and served with fried bread.
Ingredients
- 12 ounces Lima Beans, fresh or frozen (Use tender, young lima beans. If using frozen, thaw before cooking.)
- 1 tablespoon Butter
- 2 tablespoons Fresh Parsley, chopped
- 0.5 medium Small Onion, finely chopped
- 3 ounces Raw Ham, diced
- 3 tablespoons Chicken or Vegetable Stock
- 2 slices Bread, cubed (For fried bread dice)
- 1 tablespoon Oil (For frying bread)
- 0.25 teaspoon Salt (To taste)
- 0.25 teaspoon Black Pepper (To taste)
Instructions
- 1If using fresh lima beans, bring a pot of water to a boil. Add the lima beans and blanch for 5 minutes to whiten them. Drain the beans.
- 2In a saucepan, melt the butter over medium heat. Add the chopped onion and cook until softened and translucent, about 5 minutes. Add the diced ham and cook until lightly browned, about 3 minutes.
- 3Add the blanched lima beans and chopped parsley to the saucepan. Season with salt and pepper. Stir in the chicken or vegetable stock. Bring to a simmer, then reduce heat and cook until the lima beans are tender, about 10 minutes.
- 4While the lima beans are simmering, heat the oil in a skillet over medium heat. Add the cubed bread and fry until golden brown and crispy, about 5 minutes. Drain on paper towels.
- 5Serve the lima beans hot, garnished with the dice of fried bread.
