Indian Meal (Cornbread)

A simple Indian-style cornbread, baked until golden brown. Lard provides richness and flavor.

Ingredients

  • 2 cups Cornmeal
  • 0.5 cup Lard (Divided)
  • 0.5 teaspoon Salt
  • 1 cup Water

Instructions

  1. 1Preheat oven to 350°F (175°C). Grease a baking pan (8x8 inch) with half of the lard.
  2. 2In a bowl, mix together the cornmeal, salt, and water until well combined.
  3. 3Turn out the cornmeal mixture into the prepared pan, and even it out with a wooden spoon.
  4. 4Spread the remaining lard, softened slightly, evenly over the top of the cornmeal mixture.
  5. 5Bake in the preheated oven until golden brown, about 30 minutes.
  6. 6Serve hot.
