Hard-Boiled Egg Sauce

A simple sauce made with hard-boiled egg yolks, olive oil, vinegar, and seasonings, suitable for meat and fish.

Ingredients

  • 2 large Hard-boiled eggs (Use only the yolks)
  • 3 tablespoons Olive oil
  • 2 tablespoons Vinegar (White wine vinegar or cider vinegar recommended)
  • 1 pinch Salt (To taste)
  • 1 pinch Black pepper (Freshly ground, to taste)

Instructions

  1. 1Separate the yolks from the hard-boiled eggs. Discard or save the whites for another use. Place the yolks in a small bowl.
  2. 2Using a fork, mash the egg yolks into a fine paste. Ensure there are no large lumps.
  3. 3Gradually add the olive oil to the egg yolk paste, whisking constantly until the mixture emulsifies and becomes smooth and creamy.
  4. 4Add the vinegar, salt, and pepper to the sauce. Whisk to combine. Taste and adjust seasoning as needed.
