Hard-Boiled Egg Sauce
A simple sauce made with hard-boiled egg yolks, olive oil, vinegar, and seasonings, suitable for meat and fish.
Ingredients
- 2 large Hard-boiled eggs (Use only the yolks)
- 3 tablespoons Olive oil
- 2 tablespoons Vinegar (White wine vinegar or cider vinegar recommended)
- 1 pinch Salt (To taste)
- 1 pinch Black pepper (Freshly ground, to taste)
Instructions
- 1Separate the yolks from the hard-boiled eggs. Discard or save the whites for another use. Place the yolks in a small bowl.
- 2Using a fork, mash the egg yolks into a fine paste. Ensure there are no large lumps.
- 3Gradually add the olive oil to the egg yolk paste, whisking constantly until the mixture emulsifies and becomes smooth and creamy.
- 4Add the vinegar, salt, and pepper to the sauce. Whisk to combine. Taste and adjust seasoning as needed.
